HAM PASTA SALAD RECIPE

Summer's here and the warmer days mean salads are often a great go to meal when you don't feel like spending too long in the hot kitchen.  Often though, we find salads, although tasty, are not always the most satisfying.  To counter this we've put together this delicious ham pasta salad recipe!  Having the addition of pasta to the salad provides carbohydrates, the ham gives protein and the avocado and olive oil are healthy fats, when we eat this salad we feel nice and full for longer.

We've been experimenting with creating our own salad dressings too and the dressing we addd to this salad is not overpowering but provides extra flavour.  Due to a food intolerance Keil has been eliminating dairy from his diet, many dressings are dairy based with mayonnaise and so this is perfect for him!

Ham Pasta Salad Recipe with Homemade Dressing (dairy free)

Like most salads you can tailor this to your personal preferences, you can change ham for any protein you like and for the salad ingredients you can use whatever you have in your fridge!

Ingredients

For the Pasta:
  • 100g Wholegrain Pasta
  • 1tsp Olive Oil
For the Salad:
  • Lettuce
  • Cucumber
  • Radish
  • Cherry Tomatoes
  • Avocado
  • Ham
For the Dressing:
  • 3 tbs Olive Oil
  • 1 tbs Balsamic Vinegar
  • 1 tsp Mustard

Instructions

  1. Cook pasta in boiling water as per packet instructions
  2. Once cooked drain pasta and mix olive oil in, leave to cool.
  3. Chop all salad ingredients and mix together, adding in pasta.
  4. Mix together dressing ingredients
  5. Mix dressing with salad

We certainly enjoyed this salad and will be having it again next time the weather warms up.  This would also be perfect to pack into lunch boxes for work or school!
