Curry is a food I love to eat. I was born and still live in a city which is known as the curry capital of the UK (probably the world) so there is no shortage of great curry houses to choose from. I also love to cook and enjoy making my own which is why I was inspired to create this chicken and chickpea curry recipe.
Before I began my health and weightloss journey I could often be found in a local curry restaurant at least once if not twice a weekend after a heavy night out drinking lots of beer. It was during one of these booze fuelled visits when I saw myself in one of the mirrors and was horrified at the reflection staring back at me! I made the decision there and then to take back control and start working towards a fitter and healthier life.
Although I still enjoy going for a curry now and then, it’s not something I want to do all the time anymore. Instead, I like to make my own healthy curries at home.
Chicken and Chickpea Curry
I first discovered this chicken and chickpea curry during the summer when the weather was hot and I didn’t want to eat anything too spicy. Due to the subtle flavours this curry is perfect for everyone and can be enjoyed anytime, even if you are not a big fan of a super spicy curry you should still enjoy this one!
The chickpeas help to bulk out the curry, they are not an ingredient I use regularly unless I make a delicious houmous as a snack. They are a good way of getting a little bit of extra protein into this meal alongside the chicken so it’s perfect for after a good workout.
- Serves 2
- x1 tsp Oil
- x2 Chicken Breasts Chopped
- x1 Large Onion Chopped
- x1 tsp Cumin Seeds
- x1 tsp Ginger
- x2 Crushed Garlic Cloves
- x1 tsp Garam Masala
- x1 Tin Chickpeas
- x1 Tin Chopped Tomatoes
- 100g rice to serve if required
- Heat oil in a large pan adding onions and chicken
- After a few minutes add the garlic and spices stiring well to marinate the chicken
- Once chicken is cooked add chickpeas and tinned tomotoes
- Season with pepper
- Simmer for 10-15 minutes
- Serve with rice if required
