We love to experiment with new recipes so one lunchtime when we didn’t have too many ingredients in the kitchen we rustled up this tasty bacon and cheddar frittata. Usually we make omelettes if we are making something with eggs and had never made a frittata before. Since first making the recipe we have recreated it a few times.
It’s easy to make and quick, which makes it perfect on one of those days when you don’t have lots of time to prepare and cook your meal. You can enjoy it for breakfast, lunch or dinner and have it hot or cold – It’s a very versatile dish!
This recipe is relatively low in carbohydrates so it’s great for those days when you have planned another meal which is high carb. This way when you look back at your day as a whole it will be fairly nutritionally balanced. It pairs perfectly well with a nice side salad or some potato wedges if you’re looking to enjoy a more substantial meal but is equally as good on its own as a light bite.
- Serves 2
- 1 tsp oil
- 2 Rashers bacon, diced with visible fat removed
- 1 Sliced onion
- 1/2 tsp chilli flakes
- 1/2 tsp garlic powder
- 5 Eggs
- 2 tbsp milk
- Heat up the oil in a pan and fry the bacon and onions until they are cooked, we like the bacon a little bit crispy! Sprinkle garlic powder, and chilli flakes on top to season.
- Whilst these are cooking whisk the eggs and milk, season to taste.
- Pour the egg mixture into the pan with the bacon and onion mix, sprinkle cheese on top. Once the bottom of the fritatta is cooked transfer pan into the oven and cook for 10 minutes (until egg mixture is fully cooked through).
